Whether on the cob or off, this is an Easy Mexican Street Corn recipe. Here in Texas, you can find it from taco trucks, in a restaurant, or at my house!  It’s a nice change from plain old corn! My whole family enjoys the easy street corn recipe —it’s packed with flavor!

Ingredients

  • 4 ears of corn (roughly) or 15 oz. Canned or frozen corn
  • 2 tablespoons butter
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons chili powder or Tajin Seasoning
  • 1 tablespoon lime juice
  • 1 tablespoon mayonnaise (to make it creamy)
  • 1/3 cup of Cotija cheese, grated
  • 1/2 cup finely chopped cilantro (or to taste)
  • Salt & pepper to taste

Cook the corn

If using fresh-cut kernels from the cob. Boil corn in water and a couple of pinches of salt until tender. Times will vary depending on the corn you have chosen. Fresh will need to cook for at least 5 minutes, but usually more. However, frozen and canned corn only need to be heated through.

Drain water

Drain water and put it back into the pot (save yourself a dish!) It’s ok to let it sit for a few minutes.   You want to add the butter at this point so it will melt easily.

 I will usually let it stand and steam for about 5 minutes to melt the butter & reduce the water further.

Add all other Ingredients 

Add all ingredients except the cheese, then stir until the mayo is evenly distributed. 

Lastly, add the cheese. Now, keep in mind that once warmed up, the Cotija cheese can appear a bit odd. It’s completely fine! I put mine in the pot most of the time just because it’s easier. 

I wanted to warn you in case you are more into things that look pretty and more appetizing. If that’s the case, sprinkle the cheese on as you plate up.

**Tips and Tricks

  • I personally prefer mine a bit more traditional. That means double the chili powder and mayo to make it creamier and spicier.
  • If you love cheese, don’t hold back! I often double this as well
  • Keep Chili powder and/or Tajin on the side for the people (like me!) who want a bit more spice in their life. These wacky folks can sprinkle the flavor on their until our hearts are content and our mouths are on fire, aka. Quite happy!

**To prepare on the cob.

  • Mix mayo, spices, and lime juice in a pot and warm them up-need to boil or get it “piping” hot. Just take the chill off.
  • Baste/brush on or roll corn in the wet mix to coat the entire cob
  • Sprinkle with cheese to coat evenly with the flavors
  • Spring cilantro to taste on each cob & serve!
