“Cream of Chicken” Soup Mix

This is an easy homemade “Cream of Chicken” Soup Mix can be used in place of a can of cream of chicken, cream of broccoli, etc. I always keep a huge jar ready to grab to flavor and thicken soups, stews and other dishes. Making your own spices and soup mixing really helps you take control of the chemicals you and your family are consuming. Plus, making your own “Cream of Chicken” Soup mix costs pennies on the dollar!

Ingredients 

  • 10 Tablespoons Bouillon powder (Recipe linked below)
  • 2 cups of powdered milk (whole or low fat) 
  • 3/4 cup of corn starch
  • *Freeze dried flavors if available (see below)

Process

Put all ingredients into a food processor or blender and process until throughly blended. You can also shake well in a quart jar but I tend to double the recipe and don’t have the space in the jar to spare for this.

Store

This will fit nicely into a large canning jar with room to spare.  Keep in the pantry or on a spice self with the lid on to keep moisture out. It will clump up if exposed.

Use

Simply mix 1/3 cup to 1 1/2 cups of hot or boiling water to flavor and thicken.

I just use like a can of Homemade “Cream of Chicken” Soup Mix. Honest just eyeballing it in the crockpot or wherever I’m throwing it that day. Just start slow. You can always add more for flavor or thickening. You can also always add just more Chicken Bouillon if the flavor seems laking but the mixture is thick enough.

**Tips and trick

  • Once added, if you like the flavor but want it to thicken more, simply add a small amount of corn starch to a cup of water and stir it in. Add a bit at a time, cooking and stirring between. This will give the starch a chance to works it’s thickening magic. Stir to prevent it from settling at the bottom.
  • If you have a freeze drier (aka. You’re cooler then me), you can add 1/2 – 1 cups of whatever freeze fried ingredient you like.  You could make it chicken, broccoli, mushroom, celery. Basically, the possibilities are endless!
  • If you don’t have a freeze drier, simply add fresh, canned or frozen flavors of your choose. I basically throw in broccoli whenever I can. Such a super food!
  • You can also make a spicy or cajun version by added 2 tablespoons (or more if you dare!) of cajan seasonings like Tony Chachere’s or you can add 1 tablespoon cayenne and/or 1 tablespoon chili power.
  • Add whatever flavors you and your family like. Or keep several versions for different dishes and occasions
